Oatmeal and banana pancakes

They are easy to prepare but you will have to calculate about 30 minutes to have them ready. They can be served hot or warm with honey and accompanied with some fruit on top.

Ingredients:

Oatmeal 200 g, Eggs 1, Banana 1, Chemical yeast, 5 g, Brown sugar 50 g, Ground cinnamon 5 g, Sunflower oil 10 ml

Preparation :

To make this recipe we are going to mix the oatmeal with the baking powder, cinnamon and sugar. Blend them well until you get a consistency similar to that of a slightly thick flour.

Then add the coconut milk and the egg. We beat very well until everything is integrated into a homogeneous and somewhat thick mixture. Heat a few drops of vegetable oil in a non-stick frying pan. When it is very hot, pour it into the equivalent of a ladle for dough soup. We leave about three to four minutes until it begins to bubble. Flip the pancake over and leave another three to four minutes on the other side. We serve hot with strawberries, banana and honey.

Açai Bowl with fruits and seeds

For dads who take care of themselves, we bring a very healthy variant. Its preparation is simple and you have it ready in 10 minutes .

Ingredients :

Banana (frozen), 2 Blueberries (frozen) 40 Raspberries (frozen) 25, Almonds 6, Milk 150 ml, ground Açai 5 g, various seeds to decorate.

Preparation :

It is necessary that to make the açai bowl we have the frozen fruit so that the consistency is creamy. To do this, before preparation, we peel and cut the bananas into slices and freeze them. We also have that blueberries and raspberries are frozen.

Place the frozen fruit in the glass of a powerful blender along with the almonds. Add half the milk and the ground açai (five grams corresponds to one level tablespoon). We crush until homogeneous and test the thickness. Add the rest of the milk, little by little, blending again until the desired consistency is reached.

It is very important to have a powerful blender as the pieces of frozen fruit offer a lot of resistance. Any American blender is good for it. You can also make the açai bowl with Thermomix, which is the robot that I have at home. I have been increasing the speed from five to seven progressively for approximately 30 seconds.

This recipe has the plus that it is gluten-free. Of course, it will take you an hour to prepare , so if you don’t want to get up too early you can have them prepared the day before.

Ingredients:

Carrot (300 g), Eggs Size M (5), Dark baking chocolate (150 g), Brown sugar (75 g), Ground almonds (200 g), Gluten-free breadcrumbs (40 g), Sugar (40 g) , pinch salt (1)

preparation:

We will start by preheating the oven to 180 degrees. On the other hand, grate the carrots and melt the chopped chocolate in the microwave, set aside.

Beat the egg yolks together with the brown sugar until foamy, add the melted chocolate, the ground almonds, the grated carrot, the orange zest and the breadcrumbs. Mix until all the ingredients are well incorporated.

Beat the egg whites with the white sugar and a pinch of salt until stiff. Gently add to the previous preparation. Pour into a muffin pan greased with butter or a silicone one and bake for 40 minutes. Let cool before unmolding.

Ingredients (for 9 muffins):

200 g of condensed milk, 2 eggs, 75 ml of mild olive oil, 150 g of pastry flour, 1 teaspoon of chemical yeast, the zest of a lemon and sugar for sprinkling.

preparation:

We start by beating the eggs with the condensed milk and olive oil. Add the lemon zest and beat again. Add the flour with the yeast, previously sifted and stir with a spatula so that everything is integrated.

Cover the mixture with plastic wrap and store it in the fridge for a couple of hours, better if it can be overnight. Fill the capsules up to 3/3 parts, sprinkle a little sugar on each of them.

Introduce the tray in the oven preheated to 180ºC and cook them for about 20 minutes or until pricking it with a toothpick comes out clean. Open the oven and let them rest for 5 minutes before removing them to let them cool completely.

English muffins with egg and bacon

Ingredients:

English muffins (or alternatively, rolls), eggs, bacon and, optionally, cheese.

preparation:

If you cannot find English muffins and the rolls are not to your complete satisfaction, you can prepare them yourself thanks to this simple recipe for English muffins . Once we have them, we only have to make a hole in the center for the egg yolk (you can use a plating ring as a guide) and toast them lightly so that they are crispy.

On the other hand, in two pans, one with oil and the other without it, fry the eggs (taking care that the yolk is juicy) and the bacon, which should be well browned and crispy.

The assembly of this muffin is very simple. In the lower part we place a slice of cheese (Havarti, for example) and on it the hot bacon, so that it melts slightly. Finally, we place the fried egg, taking care that the yolk remains in the center so that it coincides with the hole we have made in the bread.

A very easy and quick recipe to make without having to get up too early as they are “baked” in the microwave. In 15 minutes of preparation you will have breakfast ready.

Ingredients (for 2 mugcakes):

100g of flour, 100g of dark chocolate for desserts, 100g of butter, 100g of sugar, 2 eggs, 2 tablespoons of chemical yeast, chocolate chips.

preparation:

Let’s start by placing the chopped chocolate and butter in a bowl. Then we heat it in the microwave for 1 minute, we take it out and, taking advantage of the heat of the butter, we finish melting the chocolate while mixing with the rods.

In that same bowl we can add the flour, sugar, yeast and beaten eggs. We stir well until we form a homogeneous and manageable mass, we add two handfuls of chocolate chips and finish mixing.

Now we distribute the dough in two cups that we will have greased with a little butter. The dough should occupy about three quarters of the cup, so that when it rises it overflows slightly. Top with a few chocolate chips and microwave. With about 6 minutes it will be enough to “bake” the two mug cakes at the same time. Let cool and serve.

To facilitate the task, we can separate the yolks from the whites and beat the latter almost to the point of snow. This way we will have a very spongy base. On the other hand, season the yolks and beat them, incorporating them into the beaten egg whites.

After one last whisk to the whole, put a few drops of oil in a frying pan and let it heat up well. We put our “foam of beaten eggs” in the pan and let them cook, first one minute on medium heat and then another 5 minutes on low heat. Important tip: You don’t have to move the tortilla but let it set.
